Diamond grinding rod for our damask knife series sycamore maple



Good news first: Since our damask kitchen knives from the sycamore series are vacuum heat treated after the grinding process, the sharpness is maintained for a long time. However, it is in the nature of things that when cutting, a microfine ridge is created, which is not visible to the naked eye. For this reason, for example, the classic barber pulls the razor with the blade over a piece of cowhide. Our damask kitchen knives are far less sensitive. If you want, depending on the application, once a week with the diamond sharpening stick you can ensure that the blade remains as extremely sharp as on the first day.

The sharpening stick – material and application


The grinding rod or sharpening rod optically consists of two or even three parts. The actual grinding rod with a length of 226 mm is made of stainless steel with a high carbon content. The rod is set with tiny synthetic diamonds that have an immense hardness. This is also necessary, because our damask knives impress even with a hardness of 60 to 62 HRC. A protective ring is attached to the transition to the ergonomically shaped handle. In a careless moment, the damask knife can therefore not injure the hand. The handle itself is handmade from the precious hardwood sycamore and fits harmoniously into the knife series of the same name with its beautiful grain.


If you want to pull your damask kitchen knives over the sanding rod once a week, only a little practice is required. Our knives are usually fitted with a cutting angle of 15° on both sides. TIP: To apply the sharpening rod at the correct angle, first hold the cutting edge at right angles 90° to the sanding rod. Estimate half of them (= 45°) and choose half again (= 22.5°). Depending on which Damascus knife is sharpened from the series, the hand position can be changed a little, i.e. increase or decrease the angle a bit. Over time, you will get a sense of the correct angle.

Special sharpening stick handle – ergonomics


If the grinding angle is not exactly right, this is not tragic. The only important thing is that the damask kitchen knife is pulled continuously over the grinding rod without "egging" – with a nice flowing movement. This requires a sharpening stick handle that fits perfectly in the hand. Similar to our carving fork, we have chosen a handmade cylindrical handle made of sycamore maple that tapers slightly conically on both sides. In this way, we respond exactly to the hand position or holding position, which is important for a safe removal of the Damascus kitchen knives.
