Thanks to the 67 layers of Damascus steel, the blade has a solid robustness, which is urgently needed for boning. The beautiful damask raindrop pattern on the blade indicates this special blacksmithing. And why does this damask kitchen knife cut so easily through tendons and cartilage, exposing bones? This is due to the fact that a 15° angle has been applied to the cutting edge on both sides and a total of 12 grinding processes ensure extreme sharpness.
