Whether carefully prepared in the kitchen, or outside in the garden at a convivial barbecue – when the smell of roasted meat or poultry spreads, the anticipation increases. But such a juicy T-bone steak first needs to be brought into the right shape. In addition, it requires a cleaver, which you give the necessary trust: A strong blow with the original Devil's Hole Damascus cleaver and the clippings are cut as desired. Why does this work so well? This requires the right "ingredients" just like in the kitchen. In this case, a very special blade and an equally unique knife handle.

Sharp kitchen knife thanks to excellent blade


When the cleaver rushes down and hits the dulcimer, it has previously divided meat and bones as desired: Here a powerful mixture of mass and acceleration works with an extra sharp edge. Even a glance at the 180 mm long and 85 mm high knife blade underlines that this 400 g damask knife is intended for the rough, before it goes further to the fine work. The indestructible knife blade consists of 67 layers of Damascus steel, was folded again and again until the breathtakingly beautiful damask rainbow pattern was created on the blade. On the 56 to 58 HRC Rockwell hard blade, an angle of 55° is applied to the cutting edge (12 grinding operations). Steaks, spare ribs, poultry sharing – everything is easy to do with this solid damask kitchen knife.

Knife handle made of solid wood sycamore maple


The sycamore maple belongs to the noble hardwoods and is popular in luxury furniture production and instrument making because of its decorative wood and occurring growth characteristics (bar growth, burl growth). Therefore also for our knife handle a good choice. Because even the maître presents himself as a "conductor" when he sets the tone for exquisite cuisine to his assistants. With its medium bulk density of 0.63g/cm³, the sycamore maple (naturally unique) has very good elastomechanical properties and good stamina – therefore predestined for the handle of the cleaver. But our damask kitchen knife has other special "grip properties".

It is the ergonomic features that distinguish this knife handle in particular. The solid sycamore handle was shaped in such a way that two pairs of fingers at the bottom of the handle plus the laterally fitting thumb form a unit in conjunction with the palm of the hand. In simple words: This kitchen knife fits perfectly in the hand. Powerful and with safe guidance, pieces of meat and bones can be easily cut on the dulcimer.
