If you enter "delicious vegetable recipes" or "vegetable recipes for weight loss" on the Internet as a search query, you will get a variety of delicious results. No wonder. Vegetables are in demand like never before. Healthy and tasty, it brings color to the menu and has long since developed from a side dish to a main course, especially for vegetarians. Vegetables are also an integral part of Asian cuisine when it comes to spoiling guests with culinary delights. Depending on the cooking time, the vegetables are cooked with a little vegetable oil in a wok or gently steamed by means of a sieve insert in the hot steam. However, the vegetables should first be cut into bite-sized pieces or chopped. This is exactly where our damask vegetable cleaver comes into play. A solid and sharp kitchen knife, with an extra wide blade, which allows all vegetables and herbs to be brought into the desired shape. The knife blade deserves special attention. On the one hand, the forging process has achieved extreme sharpness. 67 layers of Damascus steel were folded again and again until this impressive blade met the high demands of the blacksmiths. Also because of the high carbon content and the grinding technology (15° grinding angle and 12 grinding processes), the damask knife achieves its special sharpness. On the other hand, the beautiful damask rainbow pattern, which stands out on the blade, is a real feast for the eyes. On the 84 mm wide or high knife blade it comes into its own. Due to the high blade, the Damask kitchen knife is predestined to use different cutting techniques: vegetables in thin stiffness (julienne cut), slightly thicker sticks (batonnet cut) or vegetables as the smallest cubes (brunoise cut). But the clean cut is not only due to the blade.

Especially a slightly heavier vegetable cleaver must "fit well in the hand". While the free hand pushes the vegetables or herbs in the weighing cut with ingredient supply, the other hand safely grasps the handle and performs the blade movement. With our Damascus kitchen knife, the hand grips a specially ergonomically shaped solid wood handle made of sycamore. Due to the natural growth, no handle is the same as the other. Growth and colour differences speak for the original – a unique specimen, certified by nature.

The ergonomics of the knife handle is worth special consideration. Because the solid wood handle made of sycamore has been processed in such a way that it lies optimally in the hand. Whether right-handed or left-handed, index and middle fingers as well as ring finger and little finger always form a unit. In harmony with the thumb, which lies slightly to the side, there is a stable knife guide and consequently precise cutting or chipping result.
